Mussels in mild curry soup

: by Lady Erin Langford

Mussels not Muscles Munch Munch Munch I love a simple easy dish that could be used as a main or tasty appetizer and this little Women’s Weekly recipe that I have amended just a tad knocks your taste buds outta the park. I found it in their Fast Soups cook Book. I’ve only made some minor adjustments like whisking rather than stirring to stop the lumpy lumps and also I’ve changed up the Dill to Parsley. Personally every time I […]

Cream of Chicken Soup

: by Lady Erin Langford

I found the cream that comes from chickens! Munch Munch I never really understood it’s name when I was younger, I mean there is no cream in chicken. I wrote this recipe down from a newspaper many years ago and thought to make it today, my notes were so rough that measurements were missing from the ingredients so I can’t even credit the original cook unfortunately, but here it is for you.   Serves 4 1/2 head garlic, crushed 2 […]

Spring Vegetable and Risoni Soup

: by Lady Erin Langford

Munch A simple vegetable soup perfect for cooler Spring evenings. It’s so variable just add the vegies that you like or follow mine exactly below. The fact that nothing really has to be prepared nicely means it’s really quick to prep and cook. The risoni added to the soup helps in thickening up the thin base with it’s starchiness.       Serves 4 (Main Meals) dash olive oil to saute 1 large brown onion, roughly chopped 1/2 head garlic, […]

Gwyneth Paltrow’s Pho Ga/Chicken Pho

: by Lady Erin Langford

Pho Sure! From Goop. Munch Munch Munch I was reading Gwynee Paltrow’s Blog Goop (I’ve subscribed to her Newsletter) and there was a phabulous recipe idea for leftover turkey, so I tried it with a BBQ Chook from the grocery store. When cooking the stock my kitchen just smelt so fricken amazing I couldn’t wait for those 20 excruciating minutes of simmer time to be up. This is the best Pho hands down to make in your kitchen in under thirty […]

Pho Bo/Beef Pho

: by Lady Erin Langford

Vietnamese Beef Noodle Soup Munch I got this recipe from That’s Life! magazine and tried it out as it looked like a really quick and easy recipe for Beef Pho. It was actually a recipe submitted by one of their Readers, Polly Hemming from the NT. I made it exactly to the instructions (as far as flavour of the soup broth goes) and added a few other bits to bulk it out a bit, I have a huge appetite. The whole […]

Creamy Mushroom with Chicken soup

: by Lady Erin Langford

I love mushrooms so much! Munch Munch Munch You know those moments when you blow your own mind? I just had one. This soup is so freakin awesome, considering I made it up as I went along and this is my first time making it! Also if you are Vegetarian, this little bowl of goodness is so tasty you can leave out the chicken breast and substitute the chicken stock with vegie stock and you’ll be delighted, after all they […]

Chicken & Sweet Corn Soup

: by Lady Erin Langford

Munch Munch I love making this soup, because it’s perfect if you’re on a budget and most things will already be in your cupboard all you will need to purchase is the corn and the chicken. Although this is great, it will never beat your Mum’s Chicken Soup recipe.             Serves 6 Main Meals 2 medium brown onions, finely diced 1/2 head of garlic, cloves peeled and crushed 2 Tbs or a medium piece of […]

Rick Stein’s Kuala Lumpur Laksa

: by Lady Erin Langford

OMG it’s Laksa time! Munch Munch One of my all time favourite meals is Laksa – but golly I’ve had some shockers lately which means I’ve had to make one myself cause no one else seems to be able to :( Mind you though this Laksa takes a lot of love to get it to the table so make sure your making it for people who either love Laksa or people you really love. Rick Stein’s Laksa (from Lifestyle Food […]

Minestrone Soup

: by Lady Erin Langford

Munch Munch Minestrone soups is one of those versatile, easy to make meals that as long as you have the basics in there, you can’t muck it up. Really what could be more delish than tomatoes and bacon? The ingredients list looks a little riduculous when you write it all out but it’s not, it’s just loads of Mediterranean veggies :) and it makes 6 large dinner serves. This won’t take longer than 30 minutes from start to finish.   […]

Trident Asian Chicken Rice Noodle Soup

: by Lady Erin Langford

Lunch Express, choo choo! Munch The perfect healthy and very inexpensive lunch that you can make at work. I have made this plenty of times and I always receive compliments from strangers in the building. I reckon each bowl is only around $3.00 a pop. So if you have a microwave at work, invest in an inexpensive microwave/steamer bowl or if you work from home you can do this on the stove.   Serves 1 1 packet Trident Chicken Noodle […]

Winter is coming… Munch Munch Or so the Starks keep telling us. So why not get stuck into the kitchen and make some hearty soups to help you prepare for Winter’s imminent arrival. Store your leftovers for laters and you’ve got a readymade meal for when it’s too cold and you can’t be bothered cooking.   Serves 4 main meals 2 Large Onions, finely diced Half Head of Garlic, finely chopped 300 grams of Ham (I don’t have time to […]

Donna Hay Chilli Jam Chicken

: by Lady Erin Langford

Weeknight Staple with a difference Munch Munch Munch This is a perfect mid week meal. Few ingredients, little prep time and the fresh flavours pack a punch for the small effort that goes into the bowl of spicy goodness. I make this dish at least every fortnight, it’s so easy that you only need to read through the recipe the first time you make it. Takes no longer than 20 minutes all up too! And if you wish to make your own […]

A can't remember a time when food hasn't been a part of my love of life. In fact part my very first memory is of my Nanna's Carambola tree in Darwin age 2-3. Since then it was sharing an Avocado with Mum and squishing the leftovers of the skin onto our faces for a free mask in Cairns age 7. Climbing Mango trees with my best friend Rachael in Mareeba aged 11. Scoffing three plates of Spaghetti before school athletics carnivals ages 10-17. Sucking the life out of tin of Sweet Condensed Milk as a little girl. To tell you the truth I still do this ;) Savouring my first Ham and Mushroom Croissant in Paris near the Musee D'Orsay age 24. Chomping down on my first Diddy Reis on my first trip to the USA age 25. Discovering via accident that finely shaved Garlic atop soft Brie is the best cracker combination ever Age 26. Eating everything off the street in Vietnam and consuming Pho for two weeks straight age 29. Munching on Cheese and sipping Moet Chandon in the Yarra age 30. Appreciating my first Veuve Cliquot after a show in Los Angeles age 31. So what I am saying is so many big moments of my life are in someway connected to food. I may not remember the names of the all the people I met but I will more than likely remember the kinds of food I ate at the time and be able to describe them to you in more details than you want to hear. So here on Munch Munch Munch is my love of food in all it's glory. A shame I didn't start documenting earlier.
