Cookies and Cream

Cookies and Cream – kinda…what to do with left over cake or cookies

Munch Munch

Okay so not quite cookies but it tastes like it. I have mentioned earlier that I don’t like to waste food and like to recycle ingredients and leftovers where I can. If you saw my blog a couple of weeks ago I made South Park Chef’s Chocolate Salty Balls recipe and part of that meant removing the crust from the sponge cake mix. As there was so much crust I thought I would save the unwanted crunchy parts for something else, and then it hit me…Cookies and Cream! This is also a great idea if you have left over cake that’s gone a little dry or you have not enough biscuits for the amount of people in your family :)

  • 3 Scoops of Ice cream, set aside the tub for a few minutes to soften
  • 1 Handful of leftover cake or a few biscuits, broken into large bits
  • Little icing sugar to show the fairies have been (not essential but it does look pretty)

Simply spoon your ice cream onto your chopping board and poke it with large chunks of tasty stuff.

Use your veggie masher to combine. Wiggle the masher a little to make sure all the bits are mixed well.

Dust with icing sugar  and enjoy.

Handy Hint: set aside a cup of hot water and leave your ice cream spoon in it, this will help to cut through hard ice cream. Also run your Masher under hot water too.

  1. you know I think this is one I can do, even with my limited kitchen skills.

    • Easy Peasy Lyndal :) Just scrap the ice cream back to the centre of the board with the spoon and mash again – 1 min dessert!
